I’m working on a list of things that I can eat for Passover. For the first time in my adult life, I am actually completely unprepared for Passover. This week I have my first SHELF exam on Wednesday, an exam on Friday, and an entire week of St. Baldrick’s events. Sadly, I really just forgot about Passover. And then suddenly it was here.

So I actually cheat when I make Kung Pao Chicken – in that I use a premade sauce. I am a huge fan of the “Panda Express” Kung Pao Chicken sauce. I buy it at my local grocery store – but I have also seen it at Panda Express restaurants as well as on Amazon.

Do I get enough iron?
I am not a vegetarian, but I really don’t eat a lot of meat. the reason? I am an extremely picky eater, and chunks of meat just kind of grosses me out. I eat chicken, and I eat ground beef if it is IN things (like tacos or pasta sauce) – but even then only if it is heavily seasoned. Oh man I LOVE quinoa! And it is always an added bonus that it is GOOD for you. Quinoa is about 14% complete protein – meaning it contains all 9 of the amino acids. I think most people know that part though – but it is also a source for iron, magnesium, and calcium. AND it contains fiber – so its good for the digestion! I got a lot of whole grains today and a good amount of veggies. And although I could have done with less cheese, I am overall rather pleased with myself. AND I chose not to eat brownies that were offered to me today. I think that earns me a bit of a bonus on the healthy food scale. Not everyday you get offered these things, and not every day that I can turn them down.

It was a sad day for me when I finished all of my Mara’s Pasta. Being a medical student has its financial limitations. Especially since my hubby and I are trying so hard to finance a second car.
